Vinification: The grapes from previously selected plots, transported in 22 kg boxes, were subjected to rigorous sorting at the entrance to the cellar. After destemming and slight pressing, the free run juice was transferred to a stainless steel vat where it was kept at a temperature of 8°C for 48 hours until decanting. Then, alcoholic fermentation took place in a stainless steel vat with controlled temperatures of 14°C for a period of 30 days.
Ageing: 6 months, 80% in stainless steel and 20% used barrels, with bâtonnage on fine lees, protected from oxygen.
Tasting note: Clear and bright, displaying a pale salmon hue. On the nose it shows excellent aromatic intensity, with a predominance of fresh red fruits, notably raspberry, accompanied by subtle floral notes of rose and delicate citrus hints. On the palate it stands out for its freshness and expressive minerality, reflecting its origin in clay-limestone soils, which lend tension, precision and a fine texture to the overall profile. Well-integrated acidity supports the balance and extends the wine into a persistent and seductive finish.
